BEANS DRY VEGETABLES

French beans are neutral in nature .This is a dry vegetable made from French beans and potato.I like french beans when cooked with potatoes. This is a very simple dry vegetable.
Ingredients:-

1. 2 +1/2 cup french beans chopped lengthwise

2. 1 medium potato chopped medium size (optional)

3. 1 medium onion chopped

4.2 clove garlic minced

5. 3,4 sprig coriander leaves chopped

6. 2 tb. fresh grated coconut or coconut powder

7. 2 tb. peanut powder(shengdanyache kut)

8. 1 tb. oil

9. 1tsp. mustard seed

10. 1 tsp. cumin seed

11. 1 tb. coriander-cumin powder(optional)

12. salt to test

13. 1/2 tsp. turmeric powder

14. 1 tsp. red chili powder (depends as your test)

Procedure:-
1.
Heat pan and add oil,when oil hot add mustard seed and cumin seed.when they started to crackle add garlic.
2. Then add onion and fry until golden brown.
3. Add chopped beans and potato,and turmeric powder and Mix well.Cover with lid for 2 min.
4. Remove lid and add red chili powder and mix well.Again cover it until beans half cooked.(about 10,12 min.)over medium-low heat.5. Remove lid and add coconut powder , peanut powder, coriander-cumin powder and salt.Mix well.Cover it until beans cooked completely.(about 5 min.)over medium-low heat.6. Serve with chappati,plain rice, or bread.

HONEY BITTER GOURD (KARELA) FRY


Honey is sedative, anti-fungal and nourishing,Soothes tissues and help retain calcium in the body and Antibacterial – great for both internal or external problem.

The bitter gourd is specifically used as a folk medicine for diabetes.Bitter gourd contains essential vitamins and minerals; its regular use helps to prevent many complications such as hypertension, eye complications, neuritis and defective metabolism of carbohydrates.

Actually most kids don't like bitter gourd, but they love honey and my daughter is one of them.:)
So Yesterday I combined both ingredients along with some spices and made crunchy dish.
Lot's of honey...wow!Kids will defiantly eat it..:) Its test......YUMMY! It's so Delicious.....!

Ingredients :-
1. 4,5 bitter gourd(karela in Hindi and karle in Marathi)
2. salt
3. 1 tsp red chili powder
4. 1/2 tsp turmeric powder
5. 3,4 kokam or 2 tsp lime juice or 2 tsp amchur powder(found in any Indian store)
6. 1 tb oil
7. 2 tb honey

Procedure :-
1. Washed bitter gourd and chopped in round shape.Add about 3 tb salt and marinate for minimum 2 hr.
2. After 2 hr. washed it 3,4 times and drained.Meanwhile heat pan over medium heat.
3. Add 1 tb oil in pan .Press all chopped bitter gourd in both hands to drain water completely.Add it into a pan and fry for 10 min.
4. When it half cooked add pieces of kokam or lime juice or amchur powder.
5. Again fry for 25,30 min. on medium heat until brown and crispy.Then add turmeric powder,salt and red chili powder ad mix it well.
6. Add honey at last min.Just mix well.Turn off heat.Serve hot.

EGGPLANT(BRINJAL) MASALA FRY


Eggplant(brinjal) is also called "Vanga "in Marathi.

Different varieties of eggplant produce fruit of different size, shape and color, especially purple, green, or white.

In India different types of dishes made from eggplant(brinjal) curry,dry,fry,rice ect.

I love to eat brinjal.Yesterday I made Brinjal masala fry.I learned this recipe from my sister. Its test too good...:)We loved it.I hope you will like it.


Ingredients:-


1.1 medium onion chopped lengthwise.
2. 3 tb coconut powder or dry coconut
3. 1 tb coriander seed
4. 1/2 tb sesame seed
5.1/2 ts Poppy seed
6. 2 clove garlic
7.1/2 ts ginger paste or 1/2 inch ginger piece
8.1/2 ts cumin seed(jeera)
9. 3,4 sprig coriander leaves
10. 1/2 ts garam masala
12. 1/2 tb jaggary
13. 1tsp red chili powder (depends on test)
14. 1/2 ts turmeric powder
15. kokam
16. small size 8,9 eggplant
17. salt to test
18. 1/2 onion chopped
19.4 tb oil.



Procedure:-
1.Wash the eggplants and cut them into four, lengthwise, to three-fourths of their length as shown above. Meanwhile heat a pan and add little oil .Then add onion (chopped lengthwise).


2.When it turns brown add coconut,garlic,coriander seed,cumin seed,Poppy seed,ginger,sesame seed.


3. Fry until it turns golden brown.


4.Blend it along with coriander leaves and little bit water.Don't add too much water.Then remove all paste (masala) in a plate.


5. Add red chili powder,turmeric powder,jaggary,garam masala(found in any Indian store),peanut powder,chopped onion,small pieces of Kokam.


6. Stuff the eggplant with the masala as shown below.


7. Heat a pan with little bit oil.Place all eggplant in it.Cover it for 2 min.


8. Then remove cover and turn all eggplant.Add oil all over eggplant.


9. Cook until it fully done.Serve hot with roti.

GAVARICHI BHAJI(CLUSTER BEANS):-

Ingredients :-


1. 2 cups cluster beans(cut into small pieces with hand)

2. 1 small chopped tomato(optional)

3.1 small chopped onions

4.1 tsp red chili

5.1/2 tsp turmeric powder

6. 1/2 tsp mustard seeds

7. 1/2 tsp jeera(cumin seed)

8. 2,3 cloves chopped garlic

9. Pinch of hing

10. 2tb peanut powder (shengdanyache kut)

11. small piece of jaggary

12. 1tb oil

13. 2 tb freshly grated coconut (coconut powder)

14.chopped coriander leaves, salt to test

Procedure:-

1. Heat oil in a pan,add mustard seed,cumin seed and hing .Stir 2,3 sec. and add garlic and stir.Then add onions and stir another 1,2 min. until onions turns transparent.

2. Then add Gavar(cluster beans)and turmeric powder.Mix it well.

3. Cover it for 2,3 sec.

4. Add red chili powder(depends on your test)and mix well.Cover it and Cooked 12-15 min. on

medium-low heat until Gavar cooked.Be remember don't add water.Cooked on steam.

It's test so good.
5. Add peanut powder,salt ,tomato and jaggary.Mix it well.


6. Add coconut powder and coriander leaves.Mix and turn off heat.


7. Garnish with coconut powder and coriander leaves and serve hot with roti.

Some people boiled the Gavar and used.But for me,I don't like to boiled it.

I like to cooked Gavar on steam. It's test too good.I learned this recipe from my mother-in-low.

If you like potato you can add chopped potato along with Gavar.
