SOOJI (SEMOLINA) DHOKLA

As I said before Dhokla is a Gujarati (Western India) snack traditionally made from rice and daal.
Yesterday I made this super simple, quick recipe using Sooji .(Suji,Semolina,Rava,Cream of wheat).
Serve this delicious "Suji Dhokla" with tea and impress your unexpected guests....:)
Ingredients:-
1. 1 cup Sooji (Semolina)
2. 1tb oil
3. 1/4 tsp Carom seed (Ajwain)
4. 1 tb grated ginger
5. 2 green chili finely chopped
6. salt to test
7. 1 1/2 cup butter milk or 1 cup yogurt and 1 cup water
8. 1/4 tsp turmeric powder
9. 1 1/2 tsp ENO fruit salt (found in any Indian store)
10. spray cooking oil
For the seasoning:
1.
2 tb oil
2. 1 tsp mustard seed
3. 2 tsp sesame seed
4. 2 green chili slit
5. coriander leaves(cilantro) finely chopped
6. Fresh coconut or coconut powder for garnishing
Procedure:-
1. In a medium bowl, add Sooji, carom Seeds (just crushed with palm) and oil.Mix well until there are no lumps.
2. To the buttermilk or yogurt, add salt,green chilies,turmeric powder and ginger.Mix well.
3. Add yogurt mix into sooji and mix. Add water if need and mix until a smooth batter forms and there are no lumps.
4. Allow batter to rest for 15-20 min.Meanwhile prepare a stock pot or tall pressure cooker with 1 to 1 1/2 inches of water.Bring it to a boil.Prepare plate by lightly spraying cooking oil.Once the water comes to a boil,add ENO fruit salt to the batter and mix well.The batter will foam up.Pour batter immediately into the Dhokla plates and place Dhokla plate into the stock pot.If using pressure cooker ,do not place the weight or whistle on the cooker.
5. Cover the stock pot and cook the Dhokla on medium heat for 15,20 min. Switch off heat and remove the Dhokla from the pot or cooker.Let it cool for a few minutes.
6. For the seasoning ,heat oil in a small pan on medium heat.Add mustard seeds and allow them to pop.Add sesame seeds and allow them to pop.Add slit green chilies and let them cook for 10 sec.Switch off heat.
7. Sprinkle chopped coriander leaves and coconut on the Dhokla .
8. Pour above seasoned oil over the top.
9. Cut Dhokla into desired square pieces and serve with mint/coconut /tamarind chutney along with hot tea WAW!!!!

CABBAGE NOODLES ROLL

Yesterday I was thinking what to do for afternoon snack.I had some noodles (Maggie masala noodles which is found in any Indian store).Last 2 week I made all noodles along with masala ,but still had only some pieces of noodles leftover.And I wanted to finish them.

Suddenly I had an idea to make something from this noodles.So I made this quick recipe.It done very,very fast....!!!!!Its test too good...!!We loved it...:)You can eat it as snack or as appetizer.

Ingredients :-
1. 1/2 cup noodles boiled and drained

2. 1 tb garlic chopped

3. 1/4 cup green capsicum chopped lengthwise

4. 1/4 cup cabbage chopped lengthwise

5. about 5,6 cabbage upper leaves

6. 1 tb soya sauce

7. 1/2 tb vinegar

8. 2 green chili chopped finely

9. 1/2 tb oil

10. salt to test

11. some sticks

Procedure :-
1. Heat oil in a pan.Add garlic and fry 2,3 min.till it turns brown.
2. Add green chili and fry 1 min. more.
3. Then add green capsicum and chopped cabbage.Fry till capsicum and cabbage soft.
4. Add soya sauce and vinegar.You can add egg if you want.Mix it and turn off heat.
5. Add salt and noodles and mix it well.Cool the mix.
6. Take one cabbage leaves and stuff the mix. and join two sides with the help of stick.If leaves are not in shape,it doesn't matter.Arrange all rolls on pan.Cook until it turns soft and little bit hot.
7. Cook only side.Its test crunchy because of cabbage.Garnish with rest of noodles mix(option) and sauce.Cooking is optional.If you want you can stuff the mix.,roll it and eat it.
Serve hot.

BEETROOT SESAME COIN

Last week I made my own dish from beet root.I named it "beetroot sesame coin".How's that?
Its very very testy.Kids will love its colour and test too...:)You could serve it as snacks or as appetizer.I am sharing its recipe with you..hope you will like it.

Ingredients:-
1. 2 large beetroot peeled and greeted

2. 1 medium sized potato or 2 small potato boiled,peeled,mashed

3. 2,3 green chili chopped

4. 1/2 tsp red chili powder

5. 1 tb ginger-garlic paste

6. 1/2 tsp cumin powder

7. 1 tsp coriander powder

8. 2 tb sesame seed, 1 tb rice flour

9. 2 tb olive oil or vegetable oil

10. 1 tb coriander leaves chopped

11. salt to test, cheese for garnishing (optional)
Procedure:-
1. Heat 1 tsp oil on pan.Add greeted beetroot and fry for 2,3 min over medium heat or until water absorb.
2. Add ginger-garlic paste ,green chili and mix well.(about 1 min.)
3. Then add coriander powder,cumin powder,red chili powder,coriander leaves and mix well again.
4. Add mashed potato,salt and turn off heat.Mix well all mix.
5. Remove all mixture into a plate.Cool it down.
6. Make small ball and press it as shown below.(just like coin)
7. Take one and deep into sesame seed then deep into rice flour as shown below.Meanwhile heat frying pan over medium heat.
8. Spread oil on pan and arrange all coins over frying pan.Cooked both side until it turns golden brown.

9. Garnish with cheese. Serve hot with tomato sauce.

HEALTHY DHOKALA


Dhokala is a fast food in India.Serve it with tamarind and mint-coriander chutneys.There are many types of dhoklas.It could be made from besan(gram flour) or sooji.
Today I'm adding my experiment with making dhokala at home. Yesterday I made dhokla by using pancake flour and ground golden flax seed.And I am Happy to say my experiment was success. YUMMY!!!!
Flax seed is high in fiber.Ground flax seed and pancake flour are readily available at any grocery stores.
It is a very very very........ simple recipe and tasty too......:) Give it a try.

Ingredients:-
1. 2 cup pancake flour

2. 1 cup curd

3.
2,3 green chili minced

4. 1/2 inch ginger minced

5. 1/2 tsp turmeric powder

6. about 1& 1/2 cup water

7. 2 &1/2 tb ground flax seed

8. salt to test

9. 3/4 tsp Eno salt (found in any Indian store)

10. 1 tsp oil

11. coriander leaves and fresh coconut for garnishing

12. 1 tsp mustard seed
13. pinch of asafoetida (hing)
Procedure:-
1.
Mix curd and water.Then add green chili,ginger,turmeric, and salt in it.Mix all ingredients very well.
2. Add pancake flour and flax seed and mix it again.3. .Keep the steamer or cooker ready on gas.(remove whistle if you want to use cooker).Then add eno in it and mix.4. Immediately pour the batter into a greased vessel and steam for about 20,25 min over medium heat. or till done.6. Cool for sometimes and cut into square.Heat oil in a pan.When oil hot add mustard seed and pinch of hing.You can add curry leaves too.Allow to splutter.
7. Remove and pour it over the steamed dhokla.Garnish it with fresh coconut and coriander leaves.
8. Serve with chutney and along with hot tea.WOW!!!!

BLACK LENTIL AND SEMOLINA PANCAKE


A pancake is a thin or thick, flat cake prepared from a batter and cooked on a hot griddle or frying pan.
This is a great recipe that I found from my mother.This pancake is made from black lentils and semolina.Black lentil is rich in protein.These pancakes are easy to make and fluffy every time!
This recipe makes a perfect breakfast, snack or even a light lunch along with coconut chutney.
Ingredients:-
1.1 cup black lentil(udid dal)
2. 1 cup semolina(rava,sujji)
3. 1 tsp baking soda
4. salt to test
5. oil for fry.

Procedure:-
1. Washed black lentil 2,3 times and soak it into 2 cup of water for about 4 hr.
2. After 4 hr. grind to a fine paste. Add water as much as needed to make the pancake batter. But do not make it too watery.

3. Then add semolina,salt and mix it well.
4. At last add baking soda and mix well.Meanwhile heat pan over medium heat.
Sprinkle a little oil with a spoon. Add a batter in the center of the pan and do not spread,form a flat round. Cover it and cook for a few seconds.
5.Turn to the other side with a spatula. Cook for a few seconds. Add a few drops for oil if you wish. 6.Serve hot with coconut chutney.
