SOLKADHI (MADE WITH COCONUT MILK AND KOKAM JUICE)

One of the most popular curries from Western India is solkadhi that is made with kokam and fresh coconut milk along with some spices.Solkadhi is just like soup.
Solkadhi is a refreshing appetizer drink originated in Konkan region, Maharashtra.(Mostly made in Goa,Sawantwadi,Ratnagiri....etc.)
It is a kokani dish.And here food is incomplete without kadhi Rice.
It can be also served as beverage.Solkadhi to drink after food for digestion.Its a very easy recipe.And I love it very very .....much :)

Ingredients:-
1.
7,8 no.of kokam soaked into water for 15,20 min.

2. 3 cup fresh grated coconut or 2 cup coconut milk

3. 2 clove garlic

4. 2,3 no. of green chili(depends on your test)

5. 1 tsp black pepper powder

6. 1 tsp sugar

7. salt to test

8. 2,3 sprig coriander leaves chopped


Procedure:-
1. Soaked kokam into 1 cup of water for 15,20 min. After 20 min. you will get red colour of water(Juice) as shown below.Remove all kokam and keep water(juice) aside.
2. Blend coconut ,1+1/2cup of warm water,garlic,and green chili.If you have coconut milk just add garlic and green chili paste in it.3. Take muslin cloth and pour all blended coconut in it.Squeeze out all milk.You will get about 2 cup of milk.If you need add some warm water.
4. Pour coconut milk into kokam water (juice) .Add pepper powder,sugar,salt and garnish with coriander leaves.Mix well.Serve with rice or as a drink or as you like.

HONEY PEPPER CHICKEN

I've found this recipe on one TV show.Its probably been 5,6 years.In that time I liked it.
I've made it many times before.It was done perfectly.Its very very simple,quick and testy chicken....:)
My daughter loved honey pepper chicken and we too..:)This recipe is fantastic!

Ingredients:-
1. 1 lb boneless chicken cut into medium pieces

2. 1 medium green capsicum chopped into big size

3. 1 small onion chopped into big size

4. 1+1/2 tb pepper powder

5. 4 tb honey

6. 1 tb oil
7. salt to test




Procedure:-
1. Heat oil over medium heat,when oil hot add onion and saute for 1min.
2. Then add green capsicum and fry another 2,3 min.until onion and capsicum soft.
3. Add chicken and mix well and cover with lid for 3,4 min. over medium-low heat.
4. Remove lid and add pepper powder,and salt.Mix well.
5.Cook until all water absorb.
6. At last add honey over it turn off heat and mix well.Its done.Yummy..........!
Serve hot with bread or chappati(roti)

FRIED RICE

Fried rice is a popular component of Chinese cuisine and other forms of Asian cuisine. It is made from rice fried in a wok over high heat.

Who doesn’t like fried rice! I bet that all of us have our own favourite version .There are dozens of varieties of fried rice.Yesterday I made fried rice in my style.I really want to share with you.We loved it.I hope you will like it and Kids too.:)

Ingredients:-

1. 1+1/2 cup uncooked rice,washed,drained(If you have leftover rice you can use 3 cup of that)

2. 6 cup water

3. 2 tb oil

4. 1/4 cup french beans chopped

5. 1/4 cup carrot chopped lengthwise

6. 1/4 cup green spring onion

7. 1/4 cup white onion

8. 2 eggs(optional)

9. 1+1/2 tb soya sauce

10. 1 tb white vinegar

11. salt to test.
12. 2 clove garlic chopped

Procedure:-
1. Heat pan over medium high heat.Add 6 cup of water,salt to test and 1 tsp oil.Bring to boil.When water start boiling add uncooked rice.
2. Cooked until it done 80%.Do not cooked completely.Remove all extra water.
3. Heat wok or pan over medium- high heat.Add oil ,when it hot add garlic ,fry for 1 min.then add all vegetables except green spring onion and fry for 4,5 min. 4. Then add egg in it and continually fry 4,5 min.add little bit salt. 5. Then add cooked rice,soya sauce,and vinegar.Mix it well and fry another 4,5 min.Heat should be high in that time.And you have to do very fast all this steps.
6. At last add green spring onion and mix.7. Garnish with some green onions and serve hot....WOW!

BRINJAL BHARIT(SMOKY MASHED BRINJAL)

Brinjal is called Vange in Marathi and Baingan in Hindi.Yesterday I made bringal bharit (smoky mashed brinjal)and I love bharit.I made at least once a month.
If you roast on hot charcoal,charcoal gets a better tastes and smells to the whole dish.WOW...its ....toooooo....good!

But here I baked it in microwave.Still its not bad.It's very simple recipe.Try it.This is my favourite dish and I'm sure you would love it.

Ingredients:-

1. 1 large brinjal(eggplant)
2. 1medium sized onion chopped fine
3. 2 green chili chopped fine
4. 3,4 sprig coriander leaves chopped
5. 2 tb peanut powder(shengdana kut)
6. salt to test
7. 2 tb curd(yogurt)

Procedure:-
1.
Washed brinjal and spread 1/2tsp oil over it.Put it on microwave safe dish and microwave about 10 min.

2. Brinjal should be soft and cooked well as shown below.3. Remove the skin as shown below.
4. Mash it into a pulp with your fingers . 5. Add all ingredients in it and mix well.
6. Garnish with coriander leaves and Serve.

CABBAGE WADI(KOBICHI WADI)

Last week I made cabbage wadi(kobichi wadi).I want to share it with you.
It made from ,of course cabbage, along with chickpea flour(besan)and some spices.Its test was too good.
This easy dish makes an excellent appetizer, snack, or main entree. Yum!

Ingredients:-
1. 3 cup washed,grated cabbage

2. 10 tb chickpea (basen) flour

3. 2 tb cumin-coriander powder

4.1/2 tsp turmeric

5. 1 tsp red chili powder

6. 5,6 sprig coriander leaves chopped


7. oil for shallow fry

8. salt to test




Procedure:-
1. Add salt into grated cabbage and mix well.Keep aside for 10,15 min.Then add all ingredients except oil .
2. Mix well and make dough.Do not add water.If you need add chickpea flour.
3. Divide dough into two parts and place them on a pre-greased plate as shown below.
4. Steam for about 15,20 minutes. You can also steam them in pressure cooker.(about2,3 whistle) I steamed it in an electric rice cooker .
5. After it done, cool them and cut them.Meanwhile heat pan over medium heat.Spread oil and arrange all wadi on pan as shown below.
6. Fry both side until golden brown.
7. Serve hot.

TOMATO RICE


Tomato rice is my favourite one.Everyone will love it.Specially kids will love it.

Last week I made this rice.I've tried it before and it's very good done and it's also very fast,and very,very,very.......testy.....:) YUMMY!

So I want to share this recipes with you.Just give it a try.I am sure you and your kids will like it.

Ingredients:-
1.
1+1/2 cup uncooked rice,washed ,drained before 15 min.
2. 3 large red tomato
3. 2 green chili
4. 2 clove garlic
5. 1 inch ginger
6.1 tsp sugar
7. 1 tsp cumin seed
8. 1/2 tb butter (ghee)
9. 3+1/2 cup water
10. salt to test

Procedure:-
1. Blend tomato,garlic,ginger,chili along with 1/2 cup water.
2. Heat ghee on a pan.When it hot ,add cumin seeds.Then add blended mix.and sugar.3. Bring it to boil.
4. Add rice and mix well.5. Add rest of 3 cup water.Bring to boil.
6. Cover it with lid over med-low heat.And cooked until rice done.(for about 15,20 min.)Serve hot .
