HEALTHY DHOKALA


Dhokala is a fast food in India.Serve it with tamarind and mint-coriander chutneys.There are many types of dhoklas.It could be made from besan(gram flour) or sooji.
Today I'm adding my experiment with making dhokala at home. Yesterday I made dhokla by using pancake flour and ground golden flax seed.And I am Happy to say my experiment was success. YUMMY!!!!
Flax seed is high in fiber.Ground flax seed and pancake flour are readily available at any grocery stores.
It is a very very very........ simple recipe and tasty too......:) Give it a try.

Ingredients:-
1. 2 cup pancake flour

2. 1 cup curd

2,3 green chili minced

4. 1/2 inch ginger minced

5. 1/2 tsp turmeric powder

6. about 1& 1/2 cup water

7. 2 &1/2 tb ground flax seed

8. salt to test

9. 3/4 tsp Eno salt (found in any Indian store)

10. 1 tsp oil

11. coriander leaves and fresh coconut for garnishing

12. 1 tsp mustard seed
13. pinch of asafoetida (hing)
Procedure:-
1.
Mix curd and water.Then add green chili,ginger,turmeric, and salt in it.Mix all ingredients very well.
2. Add pancake flour and flax seed and mix it again.3. .Keep the steamer or cooker ready on gas.(remove whistle if you want to use cooker).Then add eno in it and mix.4. Immediately pour the batter into a greased vessel and steam for about 20,25 min over medium heat. or till done.6. Cool for sometimes and cut into square.Heat oil in a pan.When oil hot add mustard seed and pinch of hing.You can add curry leaves too.Allow to splutter.
7. Remove and pour it over the steamed dhokla.Garnish it with fresh coconut and coriander leaves.
8. Serve with chutney and along with hot tea.WOW!!!!

MASALA EGGPLANT BHARATA(SMOKY EGGPLANT)

The recipe I'm going to share with you today is not actually a new recipe. This is the another recipe of eggplant(brinjal,baingan,vang)bharata that I made yesterday.Its very very testy. I loved the eggplant bharata...:)
So let me share with you my testy recipe......hope you will like it too.

Ingredients:-
1. 1 large eggplant roasted,peeled and mashed(see 1 to 4)

2. 1 medium onion chopped

3. 1 medium tomato chopped

4. 1/2 cup peas(matar)

5. 1 tbsp. coriander powder

6. 2 tbsp coriander leaves chopped

7. 1 tsp mustard seed

Bold8. 1 tsp cumin seed

9. pinch of asafotedia(hing)
10. 1 tbsp curd

11. salt to test
12. 1 tb oil

13. 1 tsp red chili powder
14. 1/2 tsp turmeric powder
Procedure:-
1.
Heat oil in a pan .Add mustard seed,cumin seed and hing saute 3,4 sec.Add onion and fry 3,4 min.
2. Add tomato and mix it well. (5,6 min.)
Bold3. Add peas and fry 1,2 min.
4. Then add red chili powder and turmeric powder .Mix it.
5. Add curd,mashed eggplant,coriander powder,salt and coriander leaves.6. Mix it well.

7. Serve hot with chappati,roti or jawar bhakri(Indian bread).I usually eat it with bhakari made of bajara or rice flour .YUMMY!!!! . ENJOY :)

DRY FRUIT CHUTNEY

Dried fruit provides fiber,vitamin A and potassium.Eat too many dried fruits on a daily basis they are good for your health.
When I was making peanut chutney ,my husband said why don't you try to make dry fruit chutney in the same way.
As he said last week I made dry fruit chutney.It was good.We liked it.Thanks to my husband to gave me such a wonderful idea.
You can make healthy sandwich by using this chutney along with cheese topping.This sandwich makes a great healthy school lunch.Otherwise you can eat it as you like.......:) Hope you will try it.Leave your comments.

Ingredients:-

1. 1 cup almonds(badam)

2. 1 cup walnuts (akrod)

3. 1 cup cashew(kaju)

4. 1 cup black raisins(manuka)

5. 1tsp red chili powder

6. 2 tsp paprika

7. 1 tbsp coriander powder(optional)

8. 1 tbsp oregano (optional)

9. 1 tsp olive oil or vegetable oil

10. salt to test
Procedure:-
1. Heat oil in a pan over medium heat.Add almonds and roast it well.Remove it.Then add walnut in the same pan and roast it .Remove it and add cashew and roast it.If you want you can add more dry fruits such as pista,pecan.....Roast all separately and mix it together.
2. Take little quantity of it in a blender.
3. Blend it coarsely.Same as this blend all mixture.
4. Remove it in a bowl and add red chili powder,paprika,coriander powder,oregano and salt.Mix it well. And ready to eat...:)
