SOLKADHI (MADE WITH COCONUT MILK AND KOKAM JUICE)

One of the most popular curries from Western India is solkadhi that is made with kokam and fresh coconut milk along with some spices.Solkadhi is just like soup.
Solkadhi is a refreshing appetizer drink originated in Konkan region, Maharashtra.(Mostly made in Goa,Sawantwadi,Ratnagiri....etc.)
It is a kokani dish.And here food is incomplete without kadhi Rice.
It can be also served as beverage.Solkadhi to drink after food for digestion.Its a very easy recipe.And I love it very very .....much :)

Ingredients:-
1.
7,8 no.of kokam soaked into water for 15,20 min.

2. 3 cup fresh grated coconut or 2 cup coconut milk

3. 2 clove garlic

4. 2,3 no. of green chili(depends on your test)

5. 1 tsp black pepper powder

6. 1 tsp sugar

7. salt to test

8. 2,3 sprig coriander leaves chopped


Procedure:-
1. Soaked kokam into 1 cup of water for 15,20 min. After 20 min. you will get red colour of water(Juice) as shown below.Remove all kokam and keep water(juice) aside.
2. Blend coconut ,1+1/2cup of warm water,garlic,and green chili.If you have coconut milk just add garlic and green chili paste in it.3. Take muslin cloth and pour all blended coconut in it.Squeeze out all milk.You will get about 2 cup of milk.If you need add some warm water.
4. Pour coconut milk into kokam water (juice) .Add pepper powder,sugar,salt and garnish with coriander leaves.Mix well.Serve with rice or as a drink or as you like.
