CHICKEN LIVER IN CURD GRAVY


Yesterday I made one dish from chicken liver.I have often made this recipes.Some people don't like liver,but there are some serious fans for chicken liver just like me and my daughter...:)
Chicken livers are excellent source of nutrition,Higher in iron,higher in vitamin C.Only big bad down side is they are very high in cholesterol.
But still we liked it.Its very simple recipe.Try it.
Ingredients:-

1. 1 lb. chicken liver,washed

2. 1 medium sized onion chopped lengthwise

3. 1 small tomato chopped lengthwise

4. 1/2 tb ginger garlic paste

5. 1 tsp. red chili powder

6. 1/2 tsp. turmeric powder

7. 1/2 tsp. black pepper powder

8. 1/4 tsp. garam masala(found in any Indian store)

9. 2 tb. coriander leaves (cilantro) chopped

10. 2 tsp. oil

11. 2 tb. curd
12. salt to test

Procedure:-
1. Heat oil in sauce pan and add onion.
2. Fry onion till it turns brown.Add ginger garlic paste and mix for 1,2 sec.
3. Add tomato and mix it well.
4. Add red chili powder,turmeric powder,garm masala and black pepper powder.Mix it for 1,2 sec.
5. Add curd mix and then add liver.Mix it very well.Do not add water.Add salt to test.
6. Cooked it until gravy turns thick.Gravy is depends on you whatever you want thick or thin.Add coriander leaves and turn off heat.
7. "Chicken liver in curd gravy" is ready.Serve hot along with plain rice or roti or bread too.

CAPSICUM BHARIT (SMOKEY CAPSICUM IN CURD)

"Capsicum bharit"is the name of today's recipe.I saw it on TV in cookery show.I liked it and I tried it yesterday.It done superb!!!!.
I never heard before bharita made from capsicum too.Thanks to Cookery show. Its a very simple recipe just 2,3 steps that's it..:)
Give it a try. If you liked baigan (eggplant) bharita,I'm sure you will like Capsicum bharita too.

Ingredients:-
1. 1 Big Capsicum(green pepper) or 2 medium size,roasted
2. 1 small onion chopped
3. 1 tsp cumin seed powder
4. 1/2 tb coriander seed powder
5. 1 and 1/2 tb peanut powder
6. 1 green chili finely chopped (option)
7. 2 tb coriander leaves chopped
8. 3 tb curd
9. pinch of sugar
10. salt to test

Procedure:-
1.
Roast capsicum into microwave,oven or on stove top directly.Roasted capsicum chopped finely.
2. Add all ingredients in it.
3. Mix it well.It done...:) Serve.

SOOJI (SEMOLINA) DHOKLA

As I said before Dhokla is a Gujarati (Western India) snack traditionally made from rice and daal.
Yesterday I made this super simple, quick recipe using Sooji .(Suji,Semolina,Rava,Cream of wheat).
Serve this delicious "Suji Dhokla" with tea and impress your unexpected guests....:)
Ingredients:-
1. 1 cup Sooji (Semolina)
2. 1tb oil
3. 1/4 tsp Carom seed (Ajwain)
4. 1 tb grated ginger
5. 2 green chili finely chopped
6. salt to test
7. 1 1/2 cup butter milk or 1 cup yogurt and 1 cup water
8. 1/4 tsp turmeric powder
9. 1 1/2 tsp ENO fruit salt (found in any Indian store)
10. spray cooking oil
For the seasoning:
1.
2 tb oil
2. 1 tsp mustard seed
3. 2 tsp sesame seed
4. 2 green chili slit
5. coriander leaves(cilantro) finely chopped
6. Fresh coconut or coconut powder for garnishing
Procedure:-
1. In a medium bowl, add Sooji, carom Seeds (just crushed with palm) and oil.Mix well until there are no lumps.
2. To the buttermilk or yogurt, add salt,green chilies,turmeric powder and ginger.Mix well.
3. Add yogurt mix into sooji and mix. Add water if need and mix until a smooth batter forms and there are no lumps.
4. Allow batter to rest for 15-20 min.Meanwhile prepare a stock pot or tall pressure cooker with 1 to 1 1/2 inches of water.Bring it to a boil.Prepare plate by lightly spraying cooking oil.Once the water comes to a boil,add ENO fruit salt to the batter and mix well.The batter will foam up.Pour batter immediately into the Dhokla plates and place Dhokla plate into the stock pot.If using pressure cooker ,do not place the weight or whistle on the cooker.
5. Cover the stock pot and cook the Dhokla on medium heat for 15,20 min. Switch off heat and remove the Dhokla from the pot or cooker.Let it cool for a few minutes.
6. For the seasoning ,heat oil in a small pan on medium heat.Add mustard seeds and allow them to pop.Add sesame seeds and allow them to pop.Add slit green chilies and let them cook for 10 sec.Switch off heat.
7. Sprinkle chopped coriander leaves and coconut on the Dhokla .
8. Pour above seasoned oil over the top.
9. Cut Dhokla into desired square pieces and serve with mint/coconut /tamarind chutney along with hot tea WAW!!!!

STUFFED EGG FRY

I have always made egg curry or egg bhurji from egg. I have tired to make curry or bhurji.
SO yesterday I made this wonderful appetizer from egg.
Its very ,very ,very simple and fast recipe.
For those who tired to make curry or bhurji just like me :)try it .
I'm sure you will love it..:)

Ingredients :-
1. 4 Eggs boiled,peeled.

2. 2 clove garlic

3. 1/2 inch ginger

4. 1 green chili

5. 1 tsp chat masala (found in any Indian store)

6. little bit pepper (optional)

7. salt to test

8. 1 tb oil

Procedure:-
1. Grind ginger,garlic and green chili.Cut boiled egg into two pieces.
2. Remove yellow part in separate bowl.
3. Add ginger,garlic,chili paste and chat masala and salt .Mix it well.
4. Stuff the mix. into white part as shown below.5. Add 1/2 tsp water into the rest of mix. or add ginger,garlic paste water.Make thick batter.Meanwhile heat pan and spread oil on it.

6. Coat stuff eggs with batter and arrange over pan.

7. Cooked until both side turns golden brown.

8. Serve hot with sauce.

TODAY'S KITCHEN TIPS

1) To determine whether an egg is fresh,immerse it in a pan of cool,salted water.If it sinks,it is fresh.If it float on the surface,throw it away.

2) Potatoes will take food stains off your fingers.Just slice and rub raw potato on the stains and rinse with water.

3) If you have a problem opening jars. Try using dish washing gloves.They give a non - slip grip that makes opening jars easy.

4) To get rid of the smell of eggs in the cakes, add one tablespoon honey to the cake batter while beating it.

5) To keep cauliflower white while cooking - add a little milk to the water.

CABBAGE NOODLES ROLL

Yesterday I was thinking what to do for afternoon snack.I had some noodles (Maggie masala noodles which is found in any Indian store).Last 2 week I made all noodles along with masala ,but still had only some pieces of noodles leftover.And I wanted to finish them.

Suddenly I had an idea to make something from this noodles.So I made this quick recipe.It done very,very fast....!!!!!Its test too good...!!We loved it...:)You can eat it as snack or as appetizer.

Ingredients :-
1. 1/2 cup noodles boiled and drained

2. 1 tb garlic chopped

3. 1/4 cup green capsicum chopped lengthwise

4. 1/4 cup cabbage chopped lengthwise

5. about 5,6 cabbage upper leaves

6. 1 tb soya sauce

7. 1/2 tb vinegar

8. 2 green chili chopped finely

9. 1/2 tb oil

10. salt to test

11. some sticks

Procedure :-
1. Heat oil in a pan.Add garlic and fry 2,3 min.till it turns brown.
2. Add green chili and fry 1 min. more.
3. Then add green capsicum and chopped cabbage.Fry till capsicum and cabbage soft.
4. Add soya sauce and vinegar.You can add egg if you want.Mix it and turn off heat.
5. Add salt and noodles and mix it well.Cool the mix.
6. Take one cabbage leaves and stuff the mix. and join two sides with the help of stick.If leaves are not in shape,it doesn't matter.Arrange all rolls on pan.Cook until it turns soft and little bit hot.
7. Cook only side.Its test crunchy because of cabbage.Garnish with rest of noodles mix(option) and sauce.Cooking is optional.If you want you can stuff the mix.,roll it and eat it.
Serve hot.

KITCHEN TIPS

From Today I will give you 10 Kitchen Tips everyday that I know.I hope that could help you.

1) To easily remove burnt-on food from your skillet,simply add a drop or two of dish soap and enough water to cover bottom of pan ,and bring to a boil on stove top.skillet will be much easier to clean.

2) If you accidentally over-salt a dish while it's still cooking, drop in a peeled potato.It absorbs the excess salt.

3) Always fry onions in a little oil and pinch of salt.When it turns brown then grind.

4) To get the most juice out of fresh lemons, bring them to room temperature and roll them under your palm against the kitchen counter before squeezing.

5) To keep lemon fresh put them in water and store in refrigerator.

6) To peel garlic ,fry on hot pan for few seconds peel will come out very easily.

7) To peel the almonds easily, keep them covered in boiling water for 5 min.

8) For soft idlies like a sponge do not stir the batter after it has got fermented.Pour the batter as it is!

9) When the noodles are boiled, drain all the hot water and add cold water.This way all the noodles will get separated!

10) Keep karela(bitter guard) in water and add pinch of salt or marinate karela(bitter guard) with salt for 1/2 hour to remove the bitterness of it.

BEETROOT RICE

This is my second experiment on beetroot.I made this Delicious beetroot rice Yesterday.Its test was too good!!! and its colour WOW!!!!!Its red colour makes you and your guests feel hungry.. :).It too easy to make.Kids will love its test and colour..:)

Most important the beetroot is a very nutritious and has heaps of health benefits.Try this delicious rice...and I hope you could try it once a month.

Ingredients:-

1. 1 large beetroot peeled and greeted

2. 1 cup basmati uncooked rice washed and drained before 15 min.

3. 1/2 medium sized onion chopped lengthwise

4. 2,3 green chili chopped

5. 1 tb ginger garlic paste

6. 1 tb coriander powder

7. 1/2 tb cumin seed powder

8. 1/2 tsp turmeric powder

9. 1/2 tsp red chili powder ( as your test)

10. 1 tb coriander leaves chopped

11. 1 tsp butter or oil

12. salt to test





Procedure:-
1. Heat butter or oil into the pan and add onion.Fry till it turns brown.
2. Then add ginger -garlic paste and green chili and fry about 1,2 min.
3. Add greeted beetroot and fry another 2,3 min.
4. When almost all water absorb , then add turmeric powder,red chili powder ,coriander -cumin seed powder and mix it well.5. Add drained rice and mix it well.
6. Add 2 cup of water and salt to test.Bring it to boil.When it start to absorb water then turn heat high to low.Cover it and cooked about 10,12 min. on low heat.
7. Remove on plate and decorate with coriander leaves and some wet coconut.Serve Hot..
Look at its colour WOW!!!!
