SOOJI (SEMOLINA) DHOKLA

As I said before Dhokla is a Gujarati (Western India) snack traditionally made from rice and daal.
Yesterday I made this super simple, quick recipe using Sooji .(Suji,Semolina,Rava,Cream of wheat).
Serve this delicious "Suji Dhokla" with tea and impress your unexpected guests....:)
Ingredients:-
1. 1 cup Sooji (Semolina)
2. 1tb oil
3. 1/4 tsp Carom seed (Ajwain)
4. 1 tb grated ginger
5. 2 green chili finely chopped
6. salt to test
7. 1 1/2 cup butter milk or 1 cup yogurt and 1 cup water
8. 1/4 tsp turmeric powder
9. 1 1/2 tsp ENO fruit salt (found in any Indian store)
10. spray cooking oil
For the seasoning:
1.
2 tb oil
2. 1 tsp mustard seed
3. 2 tsp sesame seed
4. 2 green chili slit
5. coriander leaves(cilantro) finely chopped
6. Fresh coconut or coconut powder for garnishing
Procedure:-
1. In a medium bowl, add Sooji, carom Seeds (just crushed with palm) and oil.Mix well until there are no lumps.
2. To the buttermilk or yogurt, add salt,green chilies,turmeric powder and ginger.Mix well.
3. Add yogurt mix into sooji and mix. Add water if need and mix until a smooth batter forms and there are no lumps.
4. Allow batter to rest for 15-20 min.Meanwhile prepare a stock pot or tall pressure cooker with 1 to 1 1/2 inches of water.Bring it to a boil.Prepare plate by lightly spraying cooking oil.Once the water comes to a boil,add ENO fruit salt to the batter and mix well.The batter will foam up.Pour batter immediately into the Dhokla plates and place Dhokla plate into the stock pot.If using pressure cooker ,do not place the weight or whistle on the cooker.
5. Cover the stock pot and cook the Dhokla on medium heat for 15,20 min. Switch off heat and remove the Dhokla from the pot or cooker.Let it cool for a few minutes.
6. For the seasoning ,heat oil in a small pan on medium heat.Add mustard seeds and allow them to pop.Add sesame seeds and allow them to pop.Add slit green chilies and let them cook for 10 sec.Switch off heat.
7. Sprinkle chopped coriander leaves and coconut on the Dhokla .
8. Pour above seasoned oil over the top.
9. Cut Dhokla into desired square pieces and serve with mint/coconut /tamarind chutney along with hot tea WAW!!!!
